Chive vinegar
One of the things that I make every year, that my family cannot live without, is chive vinegar. It is one of the simplest recipes, and so pretty and tasty too!
All you need, are chive blossoms and vinegar.
Fill a mason jar about half way with fresh blossoms, and top up with vinegar. I use plain white vinegar, but you can use apple cider vinegar if you prefer (however, it will effect the final color and taste)
Let sit in a dark place for a month or so
strain, threw a fine sieve or cheesecloth, and voila!! Your vinegar is ready for use!
Store in a cool dark place, and enjoy all year long!
It has a mild garlicy flavor, and a bright pink color that goes great in sooo many things. Its my favorite base for salad dressings, I love it in my home made mayonnaise, use it in marinades, the possibilities are endless!
Tip: vinegar corrodes mason jar lids, ruining the vinegar. So store in glass bottles with plastic lids, or put a piece of wax paper between the jar and lid (I cut off extra wax paper with an exacto knife, and you can't even tell its there)
